Infused S'mores

The campfire trick: the marshmallow gets the fire, the chocolate gets the dose. Toast the marshmallow as hot as you like, then build the s'more on a scored square of infused chocolate that never went near the flame. One square per s'more, and every s'more is the same.

Ingredients

Makes 8 servings, about 40 mg THC in the whole batch

8 servings

Instructions

  1. 1

    Score the bark

Make the infused chocolate bark ahead and score it into equal squares while it sets. Each square is one s'more's dose; carry them to the fire in a labelled tin.

  2. 2

    Set up the base

Lay out eight graham cracker halves and set one chocolate square on each. The chocolate stays on the cracker, away from the fire.

  3. 3

    Toast the marshmallow

Toast a marshmallow over the coals until golden and molten. This is the only thing that gets hot.

  4. 4

    Build and eat

Press the hot marshmallow onto the chocolate square, cap with the second cracker, and squeeze. The marshmallow softens the chocolate just enough; it never gets hot enough to matter. One s'more, then wait two hours.

Tips from the kitchen

  • Do not melt the chocolate over the fire. Open flame runs far above the point where THC starts to break down.
  • Keep the infused tin separate from the regular chocolate and say which is which before the first marshmallow goes on a stick.
  • Half a square is a perfectly good first s'more.
