Homemade Cannabis Gummies

Gummies are the edible people most want to make and most often get wrong, and both come down to the same thing: mixing. Four ingredients is all it takes. The tincture goes in off the heat, the mixture gets whisked longer than feels necessary, and a mould with fifty identical cavities does the portioning.

Makes 50 servings, about 250 mg THC in the whole batch

Instructions

  1. 1

    Bloom the gelatin

Pour the juice into a small saucepan, sprinkle the gelatin over it, and leave it five minutes to swell.

  2. 2

    Warm and dissolve

Warm over low heat, stirring, until the gelatin and honey dissolve and the liquid is clear. Do not simmer.

    Cool, then add the tincture

Take the pan off the heat and let it cool for two minutes. Add the tincture and whisk for a full minute until the mixture is completely uniform. Uneven mixing is why some gummies hit harder than others.

    Fill the mould

Use a dropper or a squeeze bottle to fill a fifty-cavity silicone mould, filling each cavity to the same line. Work quickly and stir the pan between fills so the tincture does not settle.

    Set and label

Refrigerate until firm, about an hour. Pop them out, toss with a little citric acid or sugar if you like, and store in a labelled airtight container in the fridge: 250 mg over 50 gummies is 5 mg each.

Tips from the kitchen

  • Run your mould and tincture through the mg per gummy calculator first. Adjust the tincture, not the recipe.
  • Gummies look exactly like the unmedicated kind. Label the container and keep it away from kids and pets.
  • Keeps two to three weeks in the fridge, longer frozen. Read the gummies guide for the two fixes that matter most.
