Infused Berries and Cream Pots

This is the gentlest edible in the book and the easiest one to eat too much of. Nothing is heated, so every milligram you stir in survives to the table, and it tastes like dessert rather than like cannabis. There is no smell and no bitterness to tell you when to stop. That is why it is built in small glasses instead of one shared bowl: the portioning happens before anyone picks up a spoon, not after.

Instructions

  1. 1

    Chill everything

Put the bowl and the beaters in the freezer for ten minutes. Cold equipment whips faster, which means less time working the cream and less chance of taking it past soft peaks.

  2. 2

    Whip to soft peaks

Whip the cream with the vanilla and salt until it holds a soft peak that folds over on itself. Stop there. Stiff cream is harder to stir the honey through evenly, and even mixing is what makes the doses match.

  3. 3

    Stir the infused honey through

Add all four teaspoons of infused honey and fold until there is not a streak or a ribbon left anywhere in the bowl. Take longer than feels necessary. Any honey still sitting in one spot is a dose that ends up in one glass.

  4. 4

Divide by measure, not by eye

Spoon the cream into four small glasses using a measuring cup, about three quarters of a cup each, so every glass holds the same amount. This is the step that sets the dose.

  5. 5

    Layer and chill

Layer the berries through the cream as you fill each glass, finishing with berries on top. Chill for at least thirty minutes before serving.

    30 min

Tips from the kitchen

  • Never serve this from the bowl. A spoonful out of a shared bowl is a guess; a glass you measured is not.
  • Nothing here is heated, so the dose you stir in is the dose you eat. It also means there is no bitterness or smell to warn you, which is exactly why one glass is the limit.
  • Eat one glass and wait two full hours before deciding about a second.
  • Best the day it is made. The berries weep into the cream after that.
