Infused Maple-Pecan Granola Clusters

Granola is the easiest breakfast edible to portion: the dose lives in the coconut oil, so once the tray is baked and broken, a kitchen scale tells you exactly what a serving is. The oven stays at 300 F, comfortably below the range that costs you THC.

Ingredients

Makes 12 servings, about 36 mg THC in the whole batch

Instructions

  1. 1

    Heat the oven

Preheat to 300 F and line a sheet pan with parchment. Low heat is deliberate: it dries the granola without stressing the infusion.

  2. 2

    Mix

Stir oats, pecans, salt, and cinnamon together. Whisk the melted infused coconut oil with the maple syrup, pour it over, then fold in the foamy egg white until everything glistens.

  3. 3

    Press

Spread onto the pan and press firmly into an even slab with the back of a measuring cup. Compression is what makes clusters instead of loose cereal.

  4. 4

    Bake, then leave it alone

Bake 30 to 35 minutes until deep golden at the edges. Do not stir, and let it cool on the pan completely before touching it.

    Break and weigh

Snap the cooled slab into clusters. Weigh the batch, divide by twelve, and jot the per-serving grams on the jar so every bowl is a known dose.

Tips from the kitchen

  • Weigh servings rather than eyeballing them. Clusters vary; scales do not.
  • Keeps two weeks in a sealed jar, out of sight of the snack-curious.
