Infused Garlic and Herb Compound Butter

Compound butter is the edible you slice. Everything happens cold, the infused butter is folded through until there is not a streak left, and a parchment log chilled firm cuts into coins of the same thickness without a scale. One coin melts over a steak, a baked potato or warm bread, and the dose is the coin.

Instructions

  1. 1

    Soften

Leave both butters on the counter until a finger dents them easily, about thirty minutes. Cold butter will not blend evenly, and uneven butter is uneven dose.

    30 min
  2. 2

    Beat in the flavour

Beat the plain butter with the garlic, herbs, lemon zest, salt and pepper until light and evenly speckled.

  3. 3

    Fold in the infused butter

Add the infused butter and fold, then keep folding for a full minute past the point where it looks done. The log is only as even as this step: when the colour is completely uniform, every coin carries the same milligrams.

    Roll the log

Spoon the butter onto a sheet of parchment, fold the paper over, and roll it into a tight log about 4 cm across. Twist the ends like a sweet wrapper.

  5. 5

    Chill firm

Refrigerate until completely firm, at least ninety minutes. It slices cleanly only when cold.

    1 hr 30 min
  6. 6

    Slice into coins

Unwrap and slice into sixteen coins of the same thickness, about 1 cm each. Same thickness is same dose; a ruler beside the board is not overkill. Wrap what you are not using and label it.

  7. 7

    Serve one coin

One coin on a hot steak, a split baked potato, grilled corn or warm bread is one serving. Let it melt in and eat within the hour.

Tips from the kitchen

  • With a half cup of infused butter at a typical home strength, sixteen coins land around 5 mg each. Run your own butter through the infusion calculator and put the real number on the wrapper.
  • Start with half a coin, then wait two hours before you reach for the second half.
  • The log freezes well for three months. Slice coins straight from the freezer and they thaw on the plate in minutes.
