Infused Strawberry Lemonade

The summer edible done right means dosing the pitcher, not each glass. Sweeten the whole jug with a measured amount of infused simple syrup, stir it properly, and every glass you pour is the same. The math is done once, the label goes on the jug, and nobody has to guess.

Instructions

  1. 1

    Blend the strawberries

Blend the strawberries with half a cup of the water until smooth. Strain through a sieve into a large pitcher if you want it clear; leave it if you like it pulpy.

  2. 2

    Build the pitcher

Add the lemon juice, infused simple syrup, plain syrup and the rest of the water. Stir for a full minute so the infused syrup is evenly through the whole jug.

  3. 3

    Taste and label

Adjust sweetness with plain syrup only, never more infused syrup. Write the milligrams per glass on a piece of tape on the jug.

  4. 4

    Pour equal glasses

Stir before every pour and fill each glass to the same line, about one cup. Ice, a lemon slice and mint on top. One glass is one serving.

Tips from the kitchen

  • Eight cups of lemonade with 40 mg of syrup is 5 mg per cup. Use the infused simple syrup recipe and its label to set your own number.
  • Top-ups are how pitchers go wrong. Pour the glass once, and offer plain lemonade for seconds.
  • Keep the jug in the fridge, labelled, and away from anyone who did not sign up for it.
