Thanksgiving Pumpkin Soup with an Infused Maple Cream Swirl
Thanksgiving means kids, grandparents and guests who do not partake, all eating from the same pot. Cannabis is for adults of legal age only, so the pot stays plain. The soup is made for everyone, and any adult of legal age who wants a dose gets their own swirl: one measured teaspoon of infused maple syrup stirred into a spoonful of cream, kept to a gentle 2.5 to 5 mg.

Ingredients
Makes 6 servings, about 30 mg THC in the whole batch
Instructions
- 1
Roast
Toss the pumpkin, onion and garlic with the plain olive oil and roast at 400 F until soft and browned at the edges.
35 min - 2
Blend the pot plain
Simmer the roasted vegetables with the stock, nutmeg, cinnamon and salt for ten minutes, then blend until silky and stir in most of the cream. This pot is for the whole table, so nothing infused goes in.
10 min - 3
Make your swirl
In a small cup, stir one teaspoon of infused maple syrup, measured with a real measuring spoon, into a spoonful of cream. Keep the cup apart from the serving dishes.
- 4
Swirl your bowl only
Ladle the soup, then swirl the dosed cream into your own bowl. Mark it, or serve it last, so it can never be mixed up with a plain bowl.
Tips from the kitchen
- For adults of legal age only. Never serve a dosed bowl to anyone under the legal age in your province.
- Never dose the pot at a family dinner. Kids, grandparents and guests eat from it too.
- Keep the infused maple syrup labelled and put away before guests arrive, and well out of reach of children and pets.
- Keep it gentle: 2.5 to 5 mg, and wait up to two hours before deciding about more. Holiday meals with alcohol hit harder, so pick one or the other.
- Leftover plain soup freezes well. The dosed swirl is made fresh, one bowl at a time.
