Pizza Night with Infused Garlic Oil

Pizza is the food most likely to be dosed badly, for two reasons. A pizza oven runs past 450 F, which is hotter than your infusion should ever get, and a shared pie is never eaten in equal shares, so nobody at the table knows what they had. Both problems disappear if you move the cannabis off the pie and onto the plate. Bake the pizza exactly as you always do with nothing infused in it, stir a finishing oil while it bakes, and spoon one measured teaspoon over one slice after it comes out of the oven.

Instructions

  1. 1

Heat the oven all the way

Heat the oven as hot as it will go, 500 F with a stone or steel if you have one. Nothing infused goes in it, so there is no reason to hold the temperature back.

    20 min
  2. 2

    Build and bake it plain

Stretch the dough, spread the sauce, add the cheese and your toppings, and bake 8 to 10 minutes until the crust is blistered and the cheese is browning in spots.

    10 min
  3. 3

    Stir the finishing oil

While the pizza bakes, stir the grated garlic, herbs, chili flakes and salt into the infused olive oil in a small bowl. Keep it at room temperature. It is meant to melt into a hot slice, not to be cooked.

  4. 4

    Cut, then separate

Cut the pizza into eight slices and move the four you intend to dose onto their own board or plate before you add anything. Separating them first is what stops a dosed slice from being picked up by accident.

  5. 5

Dose one slice at a time

Spoon one level teaspoon of the garlic oil over each dosed slice and spread it with the back of the spoon. The heat still in the crust carries it through. The undosed slices stay exactly as they came out of the oven.

Tips from the kitchen

  • Never brush the oil across the whole pie. A shared pizza is never eaten in equal shares, so dosing the pie means nobody knows what they had.
  • Keep the dosed slices on a separate board all evening, and tell everyone which board is which.
  • Start with half a slice and wait two full hours before deciding whether to have more.
